
Tres Sabores is a hidden gem in the true sense, tucked onto the western Rutherford bench and easy to drive past. It is woman-owned and family-run, and certified organic through CCOF, which puts it in a small group in this collection.
The three flavours of the name are terroir, vine and spirit. The ranch grows more than grapes, with heritage olives, Meyer lemons and pomegranates in an heirloom garden, plus sheep, guinea fowl and a resident bird population. Fermentation uses the ranch's own ambient yeasts, so the wines carry the site rather than a lab strain. Cabernet Sauvignon, Zinfandel and Petite Sirah lead. Michael scores it 8 across ambiance, wine and staff, one of only a handful to do so. Dogs are welcome. A must for an organic wineries tour.
